Cucumber PopsiclesIngredients (makes about 8 popsicles)

  • 2 medium cucumbers, peeled and chopped (about 3 cups)

  • ½ cup fresh lime juice (about 4 limes)

  • Sweetener options:

    • ⅓–½ cup honey or sugar (traditional)

    • OR 2–3 tablespoons monk fruit, stevia, or erythritol (sugar-free)

  • 1 cup water (or coconut water for extra flavor)

  • Zest of 1 lime

  • Optional: a few fresh mint leaves for extra freshness

Instructions

  1. In a blender, combine cucumbers, lime juice, chosen sweetener, water, lime zest, and mint if using.

  2. Blend until smooth. Taste and adjust sweetness if needed (sugar-free sweeteners are usually stronger, so start with less).

  3. Pour mixture into popsicle molds. Insert sticks.

  4. Freeze for at least 4–6 hours, or until fully solid.

  5. To release, run warm water over the outside of the molds for a few seconds.

With the sugar-free version, you’ll get the same refreshing flavor without the added calories!

Fancy Variations

1. Cucumber Lime Ginger Popsicles

  • Add 1–2 teaspoons freshly grated ginger before blending.

  • Gives a refreshing, slightly spicy kick.

2. Cucumber Lime Mint Mojito Popsicles

  • Add ¼ cup fresh mint leaves before blending.

  • Optional: Add a splash (1–2 tablespoons) of white rum for an adult treat (takes longer to freeze).

3. Sparkling Cucumber Lime Popsicles

  • Replace the 1 cup water with 1 cup sparkling water or club soda.

  • Freeze immediately after blending to preserve the fizz.

  • Creates a light, bubbly texture.

4. Creamy Cucumber Lime Popsicles

  • Swap the 1 cup water for 1 cup coconut milk.

  • Gives a smooth, creamy popsicle with tropical vibes.
