Ingredients (makes about 8 popsicles)

2 medium cucumbers, peeled and chopped (about 3 cups)

½ cup fresh lime juice (about 4 limes)

Sweetener options:

⅓–½ cup honey or sugar (traditional)

OR 2–3 tablespoons monk fruit, stevia, or erythritol (sugar-free)

1 cup water (or coconut water for extra flavor)

Zest of 1 lime

Optional: a few fresh mint leaves for extra freshness
Instructions

In a blender, combine cucumbers, lime juice, chosen sweetener, water, lime zest, and mint if using.

Blend until smooth. Taste and adjust sweetness if needed (sugar-free sweeteners are usually stronger, so start with less).

Pour mixture into popsicle molds. Insert sticks.

Freeze for at least 4–6 hours, or until fully solid.

To release, run warm water over the outside of the molds for a few seconds.
