Ingredients

Instructions

  1. Place the diced tomatoes in a colander and sprinkle them with 1/2 teaspoon of salt. Let them drain for 10 to 15 minutes, then gently press out as much excess moisture as possible with paper towels or a clean kitchen towel. This step helps the fritters become crisp instead of soggy.
  2. Add the drained tomatoes to a large bowl. Stir in the flour, Parmesan, eggs, green onions, basil or parsley, garlic, black pepper, Italian seasoning, red pepper flakes, and the remaining 1/2 teaspoon of salt. Mix until evenly combined. The mixture should be moist but thick enough to hold together on a spoon. If it seems too wet, add another tablespoon of flour.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
