Ingredients
The Base & Aromatics
-
1 lb mild or spicy Italian sausage (casing removed)
-
1 tbsp olive oil
-
1 medium yellow onion, diced
-
2 large carrots, peeled and diced
-
2 stalks celery, diced
-
4 cloves garlic, minced
The Broth & Greens
-
6 cups chicken or vegetable broth
-
1 can (15 oz) Cannellini beans, rinsed and drained
-
1 tsp Italian seasoning
-
½ tsp crushed red pepper flakes (optional, for heat)
-
1 bunch Lacinato (Tuscan/dino) kale, stems removed and chopped
-
½ cup heavy cream (or full-fat coconut milk for dairy-free)
-
½ cup freshly grated Parmesan cheese
-
Salt and black pepper, to taste
Step-by-Step Instructions
Step 1: Brown the Sausage
-
Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.
-
Add the Italian sausage, breaking it apart with a wooden spoon as it cooks.
-
Cook for 5–7 minutes until fully browned and cooked through. Transfer cooked sausage to a paper-towel-lined plate, leaving about a tablespoon of rendered fat in the pot.
Step 2: Sauté the Veggies
-
Add the diced onion, carrots, and celery to the pot. Sauté for 5 minutes until softened.
-
Stir in the minced garlic and cook for another 1 minute until fragrant.
Step 3: Simmer the Broth & Beans
-
Pour in the chicken broth, Cannellini beans, Italian seasoning, and crushed red pepper flakes.
-
Bring the soup to a gentle boil, then reduce the heat to medium-low and let simmer uncovered for 10 minutes so the flavors meld together.
Step 4: Add the Kale & Cream
-
Stir the browned sausage and chopped Tuscan kale into the simmering soup. Cook for 3–5 minutes until the kale is tender and bright green.
-
Lower the heat to low, then stir in the heavy cream and grated Parmesan cheese until completely melted and velvety smooth.
-
Season with salt and black pepper to taste. Remove from heat and serve hot!
Chef’s Notes & Storage
-
Why Tuscan Kale? Lacinato (dino) kale is slightly sweeter and more tender than curly kale, making it ideal for soups. However, curly kale or spinach works fine as a substitute!
-
Make It Thicker: To make the broth extra creamy without adding extra heavy cream, mash half of the Cannellini beans with a fork before adding them to the pot.
-
Storage: Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop over low heat.
